I just can’t get enough of this breakfast: chia oatmeal pudding. I’ve been experimenting with it for some days now and this is by far my favourite yet. The best part is that you can actually make this the night before, taking it with you to work and enjoying an ice cold fresh breakfast without getting up early.

What do you need

  • 100 ml coconut milk
  • 100 ml water
  • 4 tbs oats
  • 4 tbs chia seeds
  • 2 tbs maple syrup
  • 1 tbs beepollen
  • 1/2 sliced banana
  • 1 handful blueberries
  • 1 handful mulberries

Put the coconut milk, water, oats & chia seeds in a jar, shake and put it in the fridge for about 2 hours or the whole night. Take the jar out of the fridge and add the fresh fruit, superfoods and maple syrup. That’s it :). Easy, healthy and soooo delicious.

Chia Seeds
Chia seeds are among the healthiest foods on the planet. They are loaded with nutrients that can have important benefits for your body and brain. Don’t be fooled by the size… these tiny seeds pack a powerful nutritional punch. To top things off, chia seeds are a “whole grain” food, are usually grown organically, are non-GMO and naturally free of gluten. Four tablespoons (54 grams) of chia seeds contains:

  • Fiber: 22 grams
  • Protein: 8 grams
  • Fat: 18 grams (10 of which are Omega-3s)
  • Calcium: 38% of the RDA
  • Manganese: 60% of the RDA
  • Magnesium: 60% of the RDA
  • Phosphorus: 54% of the RDA
  • They also contain a decent amount of Zinc, Vitamin B3 (Niacin), Potassium, Vitamin B1 (Thiamine) and Vitamin B2
