Summer is on it’s way so it’s time for a tasty summer salad recipe. How about a quinoa salad with spinach, smoked chicken, cranberries, lime juice & Parmezan cheese? It’s packed with protein: perfect as a pre- or post workout meal. Oh and also just really good if you don’t workout.
What do you need for one portion?
- 75 gr Quinoa (i used this one)
- 2 tomatoes
- 1 smoked chicken breast
- 1 handful of Spinach
- 1 handful of green olives
- 3 tbs chopped parsley
- 3 tbs chopped red onion
- 2 tbs pistachios
- 2 tbs dried cranberries
- 4 tbs shredded Parmesan cheese
- 1 lime
- 1 tbs olive oil or coconut oil
- pepper and salt
Cook the quinoa and sprinkle 2 tablespoons of Parmezan cheese when done. Ad the juice of one lime and stirr. Put the quinoa on a plate and add all of the ingredients, mix it well and finish with the last bit of Parmezan cheese.
