Quinoa Salad with Smoked Chicken & Lime Juice // Recipe by Rosalie Ruardy

Summer is on it’s way so it’s time for a tasty summer salad recipe. How about a quinoa salad with spinach, smoked chicken, cranberries, lime juice & Parmezan cheese? It’s packed with protein: perfect as a pre- or post workout meal. Oh and also just really good if you don’t workout.

What do you need for one portion?

  • 75 gr Quinoa (i used this one)
  • 2 tomatoes
  • 1 smoked chicken breast
  • 1 handful of Spinach
  • 1 handful of green olives
  • 3 tbs chopped parsley
  • 3 tbs chopped red onion
  • 2 tbs pistachios
  • 2 tbs dried cranberries
  • 4 tbs shredded Parmesan cheese
  • 1 lime
  • 1 tbs olive oil or coconut oil
  • pepper and salt

Chopped Tomatoes

Cook the quinoa and sprinkle 2 tablespoons of Parmezan cheese when done. Ad the juice of one lime and stirr. Put the quinoa on a plate and add all of the ingredients, mix it well and finish with the last bit of Parmezan cheese.

That’s it, easy but so good – enjoy!
